  • Rice salad, rice appetizers, rice casseroles and even rice desserts were the stars of the day at the Jackson County Rice Tasting Party held on September 11, at the County Courthouse in Newport.

  • September is declared National Rice Month that emphasizes the importance of rice to the economy. In Jackson County 36,620 acres of long grain rice and 15,562 acres of medium grain rice were planted which is 24,000 acres less than in 2012. Following are three shortcuts for making three of the dishes at the rice tasting. Rice Tortilla Roll-ups Make the spinach dip following the recipe on the Knorr Vegetable Soup Mix and then add one small can of sliced black olives and 1 cup of cooked rice. Spread on flour tortillas and roll up. Refrigerate and then cut into slices. Rice Krispy Brownies Make brownies using cake type brownie mix. Spread one jar of Marshmallow crème on top of warm brownies. Melt 1 cup creamy or crunchy peanut butter with 2 cups semisweet chocolate chips. Stir 3 cups crisp rice cereal in chocolate/peanut butter mixture and then spread over marshmallow layer. Chill until set. Rice Truffle Make vanilla instant pudding & pie filling mix (5.1 oz) using 2 ½ cups cold milk. Let stand 5 minutes then stir in 1 cup of whipped topping into pudding. In 9 x 13 dish layer torn pieces of whole Angel Food Cake, top with pudding, then layer 2 cups of cooked & cooled rice, and then sweetened fruit of choice ( fresh peaches or strawberries are really good) top with whipped topping and drizzle with caramel sauce. Bethany’s Five Way Rice This recipe was used by Bethany Runyan (Meadows) when she was Miss Jackson County Rice and Miss Arkansas Rice. 2-11 oz. cans shoe peg corn, drained 1-15 oz. can black beans, rinsed & drained 1-15 oz. can black-eyed pea5 green onions, finely chopped 1 large tomato, chopped 2 tsp. minced roasted garlic 1 small green pepper, seeded & diced ½ cup onion, chopped 1 cup cooked & cooled rice ½ cup Rotel tomatoes 1 cup Zesty Italian Salad dressing Salt as needed Bite size tortilla chips or crackers Combine first 9 ingredients; pour salad dressing and Ro-tel over vegetable mixture and toss gently. Cover & chill. Stir again before serving. R & R Cheese Ball 8 oz. package cream cheese, softened ½ cup sour cream 1 oz. package ranch style salad dressing mix 1 ½ cups cooked & cooled rice 1 tablespoon chopped pimento 3 tablespoons chopped green onions 1 cup grated sharp cheddar cheese Mix first 2 ingredients; stir in dressing mix. Gently stir in the rest of the ingredients until well blended. Spoon into bowl lined with plastic wrap. Refrigerate until ready to serve. Garnish as desired.
